Our old-fashioned homemade chicken noodle soup - an original recipe. Makes 24 servings
Ingredients:
3 tablespoons olive oil 2 shallots - minced 1 & 1/2 cup leeks - diced 6 stalks celery - diced 6 carrots diced 2 tablespoons fresh rosemary - minced 2 tablespoons fresh basil - minced 2 tablespoons garlic - minced 1 tablespoon grated ginger root 1 gallon chicken stock 1 lime - halved 7 6-ounce chicken breasts - cooked and diced 1/2 cup chardonnay wine 2 tablespoons chopped fresh parsley 4 tablespoons chicken base or boullion 4 cups dried egg noodles Salt and pepper to taste
Directions:
1. In a large soup pot, saute shallots, leeks, celery, carrots, rosemary, and basil in olive oil until softened.
2. Add garlic, ginger and continue to saute for 1 minute more.
3. Add chicken stock and bring to a boil. Reduce heat and simmer 30 minutes.
4. Squeeze lime into soup and drop lime in pot.
5. Add chicken, wine, parsley, chicken base or boullion and seasonings and simmer 15 minutes to blend flavors.
5. Add egg noodles and simmer until soft.
7. Remove lime halves and serve.
